Ingredientes (2 porciones)

IngredienteCantidad
Filet de pescado blanco y firme (lenguado, mero, lisa, palometa)2 filets
Limones2 o 3
Cebolla morada1
Ají picante½
Cilantro30 g
Batata o camote1
Maíz cancha50 g
Lechuga80 g
Sal y pimientaA gusto

Paso a paso

Ceviche is Peru's flagship dish and one of the simplest in Latin American cooking: fish, lime, onion, chili and salt. That's exactly why every detail counts. Most homemade ceviches fail for the same three reasons: bitter citrus, harsh onion and over-marinated fish.

Ingredients (2 servings)

IngredientAmount
Firm white fish fillet (sole, grouper, mullet, pompano)2 fillets
Limes2 or 3
Red onion1
Hot chili½
Cilantro30 g
Sweet potato1
Cancha corn50 g
Lettuce80 g
Salt and pepperTo taste

Step by step

  1. Sweet potato: peel and cook it whole in salted water over medium heat, without a rolling boil, until tender but not falling apart. Cool and slice into 1.5 cm rounds.
  2. Cancha: fry the corn in hot oil until golden and crunchy. Set aside.
  3. Onion: slice it thinly and soak 10 minutes in warm salted water. Drain. It loses its harshness and stays crisp.
  4. Fish: cut into medium cubes if the fillets are thick, or into slices if thin. Keep it very cold.
  5. Chili: seeded, in brunoise (tiny cubes).
  6. Mix: in a cold bowl, the fish with salt, lime juice, onion, chili and cilantro. Toss and refrigerate about 10 minutes.
  7. Plate: lettuce leaves as a base, ceviche in the center, cancha on one side, sweet potato on the other and a few cilantro leaves on top.

The three secrets

This is the first note in Latin American flavors. Keep going with causa limeña, arepas, feijoada and Salta-style empanadas.
