| Sal gruesa | A gusto |
In the Northwest Argentina (NOA) class of Latin American Cooking (Tucumán, Santiago del Estero, Salta, Jujuy, La Rioja and Catamarca) we made Salta-style empanadas. What defines them: beef cut by hand, never ground; diced potato; and a dough made with lard and brine.
The dough
| Ingredient | Amount |
|---|---|
| Fine flour (Argentine 0000) | 200 g |
| Warm brine (water with 10% salt) | 25 ml |
| Melted lard | 50 g |
- Melt the lard in a saucepan.
- Make the brine with 10% salt in water and warm it.
- Sift the flour into a bowl, add the lard little by little and then the brine, until you have a smooth, pliable dough.
- Chill it for 25 minutes.
- Roll it out to 2–3 mm and cut 10–12 cm discs. Dust them with flour so they don't dry out.
The filling
| Ingredient | Amount |
|---|---|
| Beef (rib eye roast) hand-cut into 1 cm cubes | 500 g |
| Onions | 2 |
| Lard | 40 g |
| Potato | 1 |
| Eggs | 2 |
| Scallions | 2 |
| Cumin, paprika and red pepper flakes | 1 teaspoon of each |
| Coarse salt | To taste |
- Peel the potato, dice it and cook in water until al dente. Stop the cooking in ice water.
- Hard-boil the eggs and cool them the same way.
- Finely dice the onion and scallions, and cut the beef into 1 x 1 cm cubes.
- Sweat the onion in the lard, add the beef, season with salt, pepper, cumin, paprika and pepper flakes.
- Add two spoonfuls of the potato cooking water and cook over low heat for about 35 minutes.
- Spread it on a tray to cool. Only once cold, fold in the chopped egg, potato and scallions.
Assembly and repulgue
Place 1 or 2 spoonfuls of filling in the center of each disc, moisten the edge with water, fold into a half-moon and press gently to seal. The Salta repulgue has 16 to 19 folds. Bake in an oven preheated to 200 °C or fry them in lard.
Llajua
The NOA's spicy sauce, of Bolivian origin: 2 ripe tomatoes, 1 chili or locoto pepper, 2 tablespoons olive oil and a pinch of salt. Grate the tomatoes on a fine grater (discard the skin), grate the chili (with all or half the seeds, depending on how hot you want it) and mix everything with the salt and oil until it becomes a little sauce.
