Paso a paso

Lomo saltado proves Peruvian cooking is a blend: Chinese wok technique and soy sauce, with potato, ají amarillo and cilantro. It cooks in minutes, so the key is having everything cut before you turn on the heat.

Ingredients

IngredientAmount
Beef tenderloin300 g, in strips
Potato300 g, in sticks
Plum tomatoes2, cut in sixths
Red onion1, in wedges the size of the tomato
Ginger10 g, grated
Garlic2 cloves, chopped
Soy sauce100 ml
Ají amarillo paste5 g
Dried oregano5 g
Cilantro50 g
Vinegar and cornstarchA little, for the sauce

Step by step

  1. Cut the beef into strips, the tomato into wedges, the onion into wedges the same size, chop the garlic and grate the ginger.
  2. Cut the potatoes into sticks and keep them in water.
  3. In a bowl, mix the soy, vinegar, cornstarch and ají paste.
  4. Fry the potatoes once to cook them through and set aside. Then fry again over high heat until golden and crisp. Drain.
  5. Heat the wok until it smokes and add oil down the sides.
  6. Sear the beef without moving it too much. Remove it.
  7. With a little more oil, toss the onion for 1 minute (without much color) and add the tomato, keeping it moving.
  8. Return the beef, add the ginger and garlic and cook a few seconds.
  9. Pour the liquids down the sides of the wok, so they hit the bottom hot, and cook about 3 minutes without boiling hard.

Graneado rice

100 g long-grain rice rinsed 4 times, 1 crushed garlic clove, 10 ml oil and water equal to the rice's weight after rinsing. Brown the garlic, toast the rice, add the water and cover until it boils (about 3 minutes). Then 10 minutes over low heat and 10 minutes resting covered, without lifting the lid.

To serve

A mound of rice on one side, the potatoes tossed with the stir-fry and cilantro leaves on top.
