Fish en papillote and roast fish with beurre blanc: two easy school methods

From the fish class of Cooking 2: the fillet that steams in its own parcel, and oven-roasted fish with France's classic butter sauce.

Fish overcooks in seconds. That's why these two methods are so forgiving: papillote cooks it in its own steam without drying it out, and the oven with butter does it in 6 minutes.

Fish en papillote

IngredientAmount
Round fish1, filleted, boned and skinned
Red bell pepper1, in fine julienne
Onion1, sliced into rings
Garlic1 clove, thinly sliced
Cherry tomatoes12, halved
Black olives8, quartered
Capers5
Basil7 leaves
Lemon1, very thinly sliced
Salt, pepper, chili flakes and olive oilTo taste
Parchment paper1 meter
  1. Fry half the garlic starting from cold oil until light golden. Set aside.
  2. On the parchment, lay the lemon slices and the vegetables with the raw garlic on top.
  3. Then the fillet and the cherry tomatoes. Add capers, basil and olives.
  4. Season and drizzle with olive oil.
  5. Seal the parcel well and bake at 180 °C for about 15 minutes, depending on thickness.
  6. Serve it in the parcel and finish with fresh basil and the fried garlic.

Roast fish with beurre blanc

A skinless flatfish fillet on a tray with 40 g cubed butter, salt and pepper: 6 minutes in the oven at 180 °C.

Beurre blanc is a butter emulsion: 1 shallot finely diced, 100 ml white wine, 50 ml vinegar and 50 g cold butter.

  1. Reduce the wine and vinegar with the shallot by half.
  2. Strain out the solids.
  3. With the liquid hot, add the cold butter in cubes and whisk vigorously until emulsified. Season.

Duchess potatoes

The side from class: cold mashed potato with an egg yolk, piped with a star tip into shapes on the plate and browned in the oven at 180 °C for 6 to 10 minutes before adding the fish and sauce.
