In culinary school, nutrition starts with one idea: eating well isn't dieting, it's pleasure and balance. The starting point is the four laws of nutrition by Dr. Pedro Escudero, founder of the Nutrition degree in Argentina, and the Dietary Guidelines that turn them into practical messages.

The 4 laws of nutrition

LawIn short
QuantityEnough to cover the energy the body needs
QualityProvides every nutrient
HarmonyNutrients in proportion to each other
AdequacyAdapted to each person: age, health, tastes, culture and budget

The 10 messages

  1. Eat from every group and move: 4 meals a day and at least 30 minutes of physical activity. Eat calmly, keep portions moderate and prefer home cooking.
  2. Drink 8 glasses of safe water a day: at least 2 liters of sugar-free fluids, without waiting to feel thirsty.
  3. 5 servings of fruit and vegetables: half a plate of vegetables at lunch and dinner, and 2 or 3 fruits. Seasonal ones are cheaper and tastier.
  4. Less salt: cook without salt, take the shaker off the table and use seasonings instead (pepper, parsley, chili, paprika, oregano).
  5. Limit sugary drinks and foods high in fat, sugar and salt: sweets, pastries, snacks, butter and cream; if you have them, small portions.
  6. Dairy every day: 3 servings of milk, yogurt or cheese, preferably low-fat. They're the calcium source.
  7. Lean meat, more fish and eggs: a serving is the size of your palm. Fish 2 or more times a week, other white meat twice and red meat up to 3 times. Up to one egg a day.
  8. Legumes, whole grains, potato, sweet potato, corn or cassava: combining legumes and grains replaces meat in some meals.
  9. Raw oil, nuts and seeds: two tablespoons of raw oil a day, alternating types, and a handful of unsalted nuts or seeds at least once a week. Prefer other cooking methods to frying.
  10. Responsible drinking: at most two drinks a day for men and one for women. Never when driving, and never for children, teens or pregnant women.
