Para personalizarla

Es el relleno clásico de la pâte à choux.

Pastry cream is the most versatile cream in pastry: it fills tarts, pastries, éclairs and profiteroles, and it can also be baked. It's considered a mother cream, because many others come from it.

Ingredients

IngredientAmount
Milk500 ml
Egg yolks6
Sugar120 g
Cornstarch40 g
Cold butter and vanilla extractAt the end, to taste

Step by step

  1. Bring the milk to a boil with half the sugar.
  2. In a bowl, mix the rest of the sugar with the cornstarch and add the yolks.
  3. Pour the hot milk over the yolks, stirring well, and return everything to the heat.
  4. Whisk constantly until it thickens and comes to a boil. Cook 2 more minutes, still whisking.
  5. Off the heat, add the cold butter and the vanilla.
  6. Spread it on a tray, cover with plastic wrap touching the surface (so no skin forms) and chill.

250 g pastry cream, 125 g heavy cream, 100 g dark couverture chocolate and 1 tablespoon dissolved instant coffee. Melt the chocolate over a bain-marie, whip the cream to 3/4 with the coffee, whisk the chocolate into the pastry cream, then fold the two together with a spatula. Into a piping bag and into the fridge.

Almond mousseline

250 g pastry cream and 250 g butter, plus praline and a tablespoon of vanilla. Beat the pastry cream and, with the mixer running, add the butter in small cubes, steadily, until smooth and velvety. Finish with the vanilla and chopped praline.

Make it your own

It's the classic filling for pâte à choux.
