ConceptoValor
Costos fijos del mes (alquiler, sueldos, servicios)$9.000.000
Ticket promedio por cubierto$25.000
Costo variable (materia prima 32% + comisiones y descartables 5%)$9.250

The break-even point is the level of sales at which the business neither earns nor loses: it covers all its costs and nothing more. Everything above is profit; everything below, loss. Knowing it changes concrete decisions: how much rent you can afford, how many people to hire, which days are worth opening.

Fixed and variable

Contribution margin

Part of every sale goes to variable costs. What's left is the contribution margin: the money each cover contributes to paying the fixed costs.

A worked example

ItemValue
Monthly fixed costs (rent, wages, utilities)$9,000,000
Average check per cover$25,000
Variable cost (32% ingredients + 5% fees and packaging)$9,250
Contribution margin per cover$15,750
Break-even point572 covers a month
Open 26 days22 covers a day

With these numbers, at 22 covers a day you only cover your costs on the last day of the month: the whole month just to break even. At 30 a day, you'd end the month with about $3,300,000 of pre-tax profit.

How to lower the break-even point
