|---|---|---|
| Harina 000 | 300 g | 200 g |
| Huevo | 3 huevos enteros | 4 o 5 yemas (2 por cada 100 g de harina) |
| Aceite de oliva | 1 cucharada | 1 cucharada |
| Agua | 1 cucharada (si hace falta) | Solo si hace falta |
| Sal | 1 cucharada | ½ cucharadita |
Paso a paso
Fresh pasta has a reputation for being hard, and it's the opposite: it's flour and egg, and the rest is practice. What changes the result is understanding two things: the ratio and the kneading. With that, in half an hour you'll have pasta that's nothing like the boxed kind.
The two base doughs
| Whole egg dough | Yolk dough | |
|---|---|---|
| Flour (Argentine 000, higher protein) | 300 g | 200 g |
| Egg | 3 whole eggs | 4 or 5 yolks (2 per 100 g of flour) |
| Olive oil | 1 tablespoon | 1 tablespoon |
| Water | 1 tablespoon (if needed) | Only if needed |
| Salt | 1 tablespoon | ½ teaspoon |
| Result | More elastic, ideal for long ribbons | Yellower, silkier and richer, ideal for shapes and fillings |
Pasta uses a higher-protein flour that builds more gluten: that gives the dough the elasticity to roll thin without tearing, and a firm bite once cooked.
Step by step
- The well: flour (with the salt) on the counter or in a bowl, with a hollow in the center.
- Break the eggs: lightly beat the eggs (or yolks) with a fork and add the oil.
- Work from the inside out: pour the egg into the center and draw in flour from the edges with your fingers or a scraper until it forms a paste.
- Knead until you have a smooth ball that doesn't stick. If it's dry and cracks, wet your hands and keep kneading; repeat until you get the texture, never pouring in water all at once.
- Rest 30 minutes wrapped in film in the fridge. The gluten relaxes and then rolls out without a fight.
- Roll and laminate: run it through the machine (or use a rolling pin), folding and passing it again, until you have an even, smooth sheet.
Three cuts to start with
- Tagliolini: cut the sheet into 30 cm lengths, dust with semolina, roll from both ends toward the center and cut 3 mm strips. Separate and form nests.
- Pappardelle: the same, but cutting wide ribbons, 2 to 3 cm.
- Farfalle (bow ties): with yolk dough, cut rectangles between 1.5 × 3 cm and 3 × 6 cm with a wheel, and pinch the center into a pleat.
Cooking
Lots of water (about 1 liter per 100 g of pasta), well salted and at a rolling boil. Fresh pasta cooks in 2 to 4 minutes depending on thickness: taste it, it should be tender with a firm center. Save a cup of the cooking water: its starch helps bind the sauce.
