Ingredientes (3 porciones)
| Ingrediente | Cantidad |
|---|---|
| Papa | 500 g |
| Harina 000 | 170 g, más para espolvorear |
| Queso parmesano | 50 g, rallado fino |
| Huevo | 1 |
| Nuez moscada, sal y pimienta | Una pizca |
Paso a paso
Potato gnocchi come from the last class of Cooking 1, along with malfatti, baked semolina gnocchi and gnocchi soufflé. The recipe is simple, but one rule defines it: for every kilo of potato purée, between 30% and 50% flour. The closer to 30%, the lighter they are.
Ingredients (3 servings)
| Ingredient | Amount |
|---|---|
| Potatoes | 500 g |
| Bread flour (Argentine 000) | 170 g, plus extra for dusting |
| Parmesan | 50 g, finely grated |
| Egg | 1 |
| Nutmeg, salt and pepper | A pinch |
Step by step
- Wash the potatoes and cook them in their skins in plenty of salted water, over medium-high heat without a hard boil, until soft inside.
- Peel them while hot and mash them with a masher until smooth and lump-free.
- Make a well with the purée on the counter and put the egg, salt, pepper, nutmeg and cheese in the center.
- Sprinkle over a good amount of flour and add the rest as the dough needs it.
- Bring it together into a smooth dough that doesn't stick. Don't overwork it.
- Rest it for a few minutes and roll ropes about 2 cm thick.
- Dust with flour, cut 1 to 2 cm pieces and, if you like, roll them over a gnocchi board or a fork.
- Lay them on a tray with flour or semolina so they don't stick.
- Cook in boiling salted water. Once they start to float, give them about 2 more minutes and lift them with a slotted spoon straight into the sauce. If the sauce is too thick, loosen it with some cooking water.
The three secrets
- Skin on: boiled whole, the potato takes on less water, and every extra drop has to be made up for with flour.
- Mash while hot: warm potato comes together with less flour. No food processor: it breaks the starch and turns the dough into glue.
- Don't overwork it: just bring it together. The more you work it, the more gluten and the gummier they get.
Which sauce
In the same class we served them with amatriciana, bolognese or panna sauce. They're also perfect with butter and sage, which shows off well-made gnocchi best.
If you'd like me to cook them at your place, they fit into any of my pasta menus.
