Ingredientes (unas 24 medialunas)

IngredienteCantidad
Harina 000250 g
Harina 0000250 g
Agua240 cc
Manteca (para la masa)40 g
Leche en polvo25 g
Azúcar25 g
Huevo25 g (medio huevo)
Levadura fresca15 g
Sal12 g
Esencia de vainilla10 cc
Manteca o margarina de hojaldre (empaste)225 g
Doradura50 g de huevo, 50 g de yema, 50 g de leche y 1 g de sal
Almíbar300 g de azúcar, 150 cc de agua y 20 cc de ron

Paso a paso

In the Bakery exam, one of the questions was how many single folds an Argentine butter medialuna takes. The answer is three. But what defines a good medialuna is the chilling between folds, so the dough and butter stretch together and form layers.

Ingredients (about 24 medialunas)

IngredientAmount
Bread flour (Argentine 000)250 g
Soft flour (Argentine 0000)250 g
Water240 ml
Butter (for the dough)40 g
Powdered milk25 g
Sugar25 g
Egg25 g (half an egg)
Fresh yeast15 g
Salt12 g
Vanilla extract10 ml
Laminating butter or margarine225 g
Egg wash50 g egg, 50 g yolk, 50 g milk and 1 g salt
Syrup300 g sugar, 150 ml water and 20 ml rum

Step by step

  1. Knead all the dough ingredients: 3 minutes on first speed and 10 on second (or the equivalent by hand, until smooth).
  2. Rest it in a block for 45 minutes. Roll it to 40 x 30 cm and freeze for 45 minutes.
  3. Meanwhile, flatten the laminating butter between two sheets of paper and chill it for 30 to 40 minutes.
  4. Place the butter over ¾ of the dough, square it up and make the first single fold.
  5. Roll to 0.5 cm and make the second single fold. Chill for 30 minutes.
  6. Roll again and make the third fold in three. Chill for 40 minutes.
  7. Roll to about 3 mm, let it rest rolled out for 10 minutes, cut 10 x 10 cm triangles and rest them 20 minutes more.
  8. Roll them up from the base, curve them into crescents and lay them on a tray.
  9. Proof at 28 °C (82 °F) for two and a half hours.
  10. Brush with the egg wash and bake at 180 °C (355 °F) for about 14 minutes.
  11. For the syrup, boil the sugar and water for 2 or 3 minutes and add the rum once cool. Brush the medialunas as soon as they come out of the oven.

The three secrets

They're part of the pastries in our pâtisserie-style afternoon tea. If you'd rather have the table set without turning on the oven, I'll bring it ready.
