Levadura fresca20 g
Sal10 g
Pimienta5 g
Azúcar2 g
Tomates cherry10
Aceitunas negras25 g, picadas
Romero fresco y sal gruesaCantidad necesaria

Paso a paso

Focaccia comes from the pizza class in our Bakery module, along with fainá, calzone and fugazzeta. It's a 60% hydration dough: moist and a little sticky, but you knead it like any yeasted dough and it's ready for the oven in ninety minutes.

Ingredients (one medium tin)

IngredientAmount
Flour400 g
Lukewarm water220 ml
Olive oil50 ml, plus extra for the tin and top
Fresh yeast20 g
Salt10 g
Pepper5 g
Sugar2 g
Cherry tomatoes10
Black olives25 g, chopped
Fresh rosemary and coarse saltAs needed

Step by step

  1. Make a well with the flour and sugar. Put the salt, pepper and the yeast dissolved in some of the lukewarm water in the center.
  2. Add the oil and the rest of the water and work it into a smooth, elastic, soft and slightly sticky dough.
  3. Let it rest for 10 minutes.
  4. Knock it back, work in the chopped olives and cherry tomatoes, and stretch it into an oiled tin about 2 cm thick.
  5. Pierce the dough with sprigs of rosemary brushed with oil.
  6. Drizzle with olive oil and sprinkle a few grains of coarse salt.
  7. Let it rise until doubled in volume.
  8. Bake at 200 °C (390 °F) for 20 minutes. Let it cool and cut as you like.

The three secrets

It's the bread I bring to the table on my Italian menus, straight out of the client's own oven.
