Feijoada is Brazil's national stew: black beans cooked with different pork cuts and sausages. At school we served it the Brazilian way: with farofa, white rice and orange.

Feijoada ingredients

IngredientAmount
Pork round (bola de lomo)500 g
Sliced pork leg300 g
Pork trotter1
Slab bacon150 g
Fresh grilling sausage150 g
Chorizo colorado (cured)100 g
Black beans300 g
Medium onions and garlic2 onions, 4 cloves
Tomato and orange1 of each
Sunflower oil100 ml
WaterAbout 2 liters, depending on the pot
Black peppercorns and salt10 g peppercorns

Step by step

  1. Cut the pork round and leg into 3 cm cubes, season with salt and peppercorns and rest 30 minutes.
  2. Blanch the trotter in boiling salted water.
  3. Remove the rind from the bacon and cut it into 2 cm lardons. Cut the sausage into 3 cm pieces and the peeled chorizo into quarter slices.
  4. Finely dice the onion and garlic, cut the tomato into concassé and the peeled orange, without pith or seeds, into chunks.
  5. Sweat the onion and garlic in oil until translucent.
  6. Add the bacon, chorizo and sausage and cook 5 minutes over medium heat.
  7. Turn up the heat and sear the meat cubes (without the peppercorns).
  8. Add the orange, tomato, beans and water.
  9. Cook covered over low heat for 40 to 50 minutes, until the meat is tender and the beans creamy.
  10. Uncover, cook 5 more minutes and adjust salt and pepper.

Farofa

1 large onion thinly sliced, 20 ml olive oil, 30 g butter and 240 g cassava flour. Caramelize the onion in the oil and butter, add the flour, season and toast for a few minutes, stirring, until crunchy.

Brazilian white rice

150 g rice, 1/2 onion and 1 garlic clove chopped, 60 ml oil, 225 ml water or stock and, if you like, half a bay leaf. Sweat the onion and garlic without browning, add the rice for 1 minute, then the liquid; cover tightly and cook 22 minutes over medium heat. Rest 5 minutes and salt.
