A restaurant's concept: making everything tell the same story

Name, menu, dishes, uniforms and lighting should follow one guiding idea. What a business concept includes and why it pays to focus it on one type of guest.

In Management we defined it like this: the concept is a set of ideas that describe the offer consistently and that shape the image the public will form of the place. If it's clear, it sets you apart from the competition and makes you memorable. If it isn't, guests don't really know what you are.

What the concept includes

The school example

A seafood restaurant. It sits near a port and is called Puerto Calamar, with an illustrated squid next to the name. The floor is wood, like the deck of an old fishing boat; tables and chairs are rustic wood; light comes from brass lanterns. The walls are white with wavy lines in shades of blue, with photos of the sea and the port. Waiters dress like sailors, the menu is squid-shaped and only fish and seafood dishes are served. The guiding ideas are the sea, its catch and fishing, and everything else follows them.

One concept, one motivation

It's very hard to build a place whose atmosphere, dishes, prices and service work for everyone. That's why it pays to focus the concept on one specific motivation. People going out for the pleasure of eating look for homestyle food, good ingredients and a comfortable room. People going out to celebrate also care about presentation, service and atmosphere.

Defining the concept is the first step of every project we work on at Celestia Management, before the menu and before the costing.
