Tapala y dejala reposar 10 minutos.
  3. Dividila en 6 a 8 bollos, formá bolas y aplanalas a 1,5 cm.

The arepa is the bread of Venezuela and Colombia: a dough of precooked cornmeal, water and salt, cooked on a griddle, in the oven or fried. At school we made two very different versions.

Venezuelan arepa (8 pieces)

IngredientAmount
White precooked cornmeal300 g
Water200 ml
Salt2 g
  1. Put the cornmeal and salt in a bowl, make a well and add the water little by little.
  2. Work the dough with your hands until hydrated, smooth and even. Cover and rest 10 minutes.
  3. Divide into 6–8 pieces, roll into balls and flatten to 1.5 cm.
  4. Cook in a pan with a little oil over medium heat, about 8–10 minutes per side, until golden.
  5. If they're still raw in the middle, finish them for 8 minutes in the oven at 180 °C.

The filling: reina pepiada

One chicken breast fillet, 1 avocado, 1/2 red onion, 30 g mayonnaise, the juice of one lemon (or two limes), 1 garlic clove, pepper and, if you like, parsley or cilantro.

  1. Cook the chicken for 30 minutes in salted water with the garlic. Shred it.
  2. Dice the avocado, finely dice the onion and chop the herbs.
  3. Mix the chicken with the avocado, onion and herbs. Season and add the lemon juice.
  4. Add the mayonnaise and mix into a creamy salad.
  5. Split each arepa with a bread knife without separating the halves, and fill.

Colombian egg arepa

Dough: 220 g precooked cornmeal, 160 ml water, 50 g butter, 1 teaspoon salt, 3 eggs (or one per arepa) and oil for frying.

  1. Heat the water with the butter until melted, pour it over the cornmeal and salt and rest 10 minutes.
  2. Knead into a firm dough, shape balls and flatten to 1.5 cm. Save a little dough for sealing.
  3. Fry the arepas one at a time in hot oil. When they puff up, take them out.
  4. Cut an opening in the side, slip in a whole egg (without breaking the yolk) and seal with the reserved dough.
  5. Fry again to cook the egg and drain on paper towels.
