Tiramisu comes from the Italian tira mi su, roughly "pick me up". At school we made it from scratch, starting with the ladyfingers, and built it in an 18 cm ring for a firm, neat cake.
1. Ladyfingers (biscuit à la cuillère)
180 g sugar, 6 egg whites, 6 yolks, 1 tablespoon vanilla, 180 g fine flour and 50 g sugar for dusting.
- Beat the yolks with a third of the sugar and the vanilla until pale.
- Whip the whites to soft peaks, add the rest of the sugar and keep going to a meringue, without overbeating.
- Fold the meringue into the yolks and finally the sifted flour, gently.
- With a bag and a 6 mm plain tip, fill buttered and floured molds (or pipe logs on paper).
- Dust with sugar and spritz with water so the surface pearls.
- Bake at 200 °C for 10 to 12 minutes and cool on a rack.
2. Coffee syrup
100 g sugar and 200 g water for a light syrup. Off the heat, 10 g instant coffee dissolved in a spoonful of water. Once cool, 30 ml coffee liqueur.
3. Mascarpone mousse
180 g sugar, 50 g water, 2 eggs, 3 yolks, 300 g mascarpone and 150 g heavy cream.
- Cook the sugar and water to a syrup at 118 °C.
- Meanwhile, whip the egg and yolks until pale. Pour in the syrup in a thin stream, close to the side of the bowl so it doesn't hit the whisk, and beat until the bowl is cool. That's the pâte à bombe.
- Whip the cream to soft peaks and mix it with the mascarpone.
- Fold the cheese cream into the pâte à bombe.
Assembly
- Wrap an 18 cm ring in film on the outside and place a cardboard disc and an acetate strip inside.
- Line the side with standing ladyfingers (trim just the base), cover the bottom and moisten with the syrup.
- Half the mousse, another layer of soaked ladyfingers and the rest of the mousse.
- Chill until firm. To serve, dust with cocoa and, if you like, chocolate shavings.
