Ingredientes (2 porciones)
| Ingrediente | Cantidad |
|---|---|
| Arroz carnaroli, arborio o doble carolina | 150 g |
| Caldo de vegetales | ½ litro |
| Champiñones de París | 40 g |
| Portobellos | 40 g |
| Hongos de pino secos | 20 g |
| Cebolla mediana | ½ |
| Ajo | 1 diente |
| Vino blanco | 30 cc |
| Queso parmesano | 40 g |
| Manteca | 40 g |
| Aceite de oliva | 20 cc |
| Tomillo y perejil | 2 briznas de tomillo y 5 ramas de perejil |
| Sal y pimienta | Cantidad necesaria |
Paso a paso
Mushroom risotto comes from the rice class of Cooking 1, along with pilaf, gohan and chaufa. It has no cream: the creaminess comes from the rice starch, released little by little as you stir.
Ingredients (2 servings)
| Ingredient | Amount |
|---|---|
| Carnaroli or arborio rice | 150 g |
| Vegetable stock | ½ liter |
| Button mushrooms | 40 g |
| Portobellos | 40 g |
| Dried pine mushrooms | 20 g |
| Medium onion | ½ |
| Garlic | 1 clove |
| White wine | 30 ml |
| Parmesan | 40 g |
| Butter | 40 g |
| Olive oil | 20 ml |
| Thyme and parsley | 2 sprigs of thyme and 5 of parsley |
| Salt and pepper | As needed |
Step by step
- Finely dice the onion and garlic.
- Soak the pine mushrooms for 5 minutes in boiling water. Drain, cut into medium pieces and keep the water.
- Quarter the button mushrooms and portobellos and sear them in a large pan over high heat with a little butter. Season and set aside.
- Bring the stock to a low simmer and keep it very hot throughout.
- In a heavy-based sauté pan, add a spoonful of butter, the oil and the onion. Cook over medium-low heat until translucent. Add the garlic and thyme, one more minute.
- Add the rice and stir quickly and constantly until the grains are evenly pearly.
- Add the wine and let it evaporate completely.
- Add the pine mushrooms and half of their soaking water. Stir for 2 minutes.
- Add the stock one ladle at a time, stirring with a wooden spoon in 0 and 8 shapes, scraping the rice off the bottom and sides. Add the next ladle when the last is almost absorbed. It takes 15 to 20 minutes, until al dente and creamy.
- Stir in the seared mushrooms.
- Turn off the heat, add all the Parmesan and the remaining butter, and beat hard so they emulsify with the rice. Add the chopped parsley, adjust the salt and serve right away.
The three moments that define it
- Toasting: coating the grain in fat seals its outside so it cooks evenly and doesn't overcook.
- Hot stock, a little at a time: cold stock stops the cooking. Pour it all in at once and you're boiling rice, not making risotto.
- Butter off the heat: butter and cheese emulsify with the starch. With the heat on, the fat splits and it turns oily.
The same technique gives you the quinoa risotto we served with lamb chops and the cuttlefish and scallop risotto from International Cooking. It's one of the most requested dishes on my 7-course menus.
