The method professional kitchens use to touch a steak and know whether it's rare, medium-rare or well done, without opening it or losing its juices.

Cutting the steak open to peek at the center is the most common mistake: the juices run out and the meat ends up drier. Professional kitchens use touch instead. Meat firms up as it cooks, and you can compare that firmness with something always at hand: your own hand.

The trick, step by step

  1. Relax your left hand, palm up.
  2. With the index finger of your other hand, press the fleshy pad at the base of your thumb. Relaxed like this, it feels like raw meat.
  3. Now touch the tip of your thumb to each fingertip, one at a time, and press the same spot again: it gets firmer.
  4. Press the center of the steak with your fingertip and compare it with your hand. The finger that gives the same firmness tells you the doneness.

Why it works (and when it doesn't)

As meat heats up, its proteins tighten, release water and the piece firms up. Your hand mimics that progression fairly well. But it's a guide, not an exact rule:

The two details that complete doneness
