Vino con quesos y con chocolate: el maridaje que parece fácil y no lo esWine with cheese and with chocolate: the pairing that looks easy and isn't

Why many cheeses go better with white than red, how to set up a board and which grape to pick for each chocolate, from the Tasting and pairing workbook.

"Grapes and cheese taste like a kiss," goes the Spanish saying. But when it comes to choosing a wine for each cheese, or serving wine with a chocolate dessert, things get complicated: you have to look at the aging, texture, fat and intensity of both, so one doesn't cancel the other.

Wine and cheese: the white-wine surprise

Red has always been thought of as the cheese wine, and yet most cheeses pair better with whites. Goat and blue cheeses go with a white (goat cheese, for example, with a Sauvignon Blanc). The ones that get along best with reds are hard, aged cheeses like manchego or parmesan.

Wine and chocolate: why it's hard

For a long time they were considered enemies, for two reasons:

The key is to balance intensity (a very powerful wine drowns a delicate chocolate, and vice versa) and to watch the sweetness: the wine should be as sweet as the chocolate or sweeter, or the chocolate will bring out the wine's bitterness. That's why dessert wines and ports work so well.
