What you don't know about eggs (and how it changes your cooking)

How to tell if an egg is fresh, which egg suits each dish, the exact boiling times and why the yolk sometimes turns green.

10 a 11Duro, yema firme y amarilla

Eggs are the most used ingredient in any kitchen and, at the same time, the one most often cooked by guesswork. At culinary school they are among the first things you study, because one ingredient holds almost every rule: temperature, time, freshness and technique.

The water test: is it fresh?

Over the days, an egg loses moisture through its shell and the air pocket inside grows. That is why an old egg floats. Fill a glass with cold water and lower the egg in gently:

What it doesWhat it meansUse it for
Sinks and lies flatVery freshPoached, fried, raw preparations
Sinks but stands upA few days oldHard-boiled, omelettes, doughs
FloatsOldThrow it away

Not every egg is good for everything

Boiling times, no guessing

A large egg, straight from the fridge, lowered into water that is already boiling. Count from the moment it goes in and, when time is up, move it straight into a bowl of iced water to stop the cooking.

MinutesResult
6Set white, runny yolk
7Creamy yolk that doesn't run (the classic jammy egg)
9Almost firm yolk, barely moist in the center
10–11Hard-boiled, firm yellow yolk

Why does the yolk turn green?

That greyish-green ring around the yolk comes from overcooking: sulfur from the white reacts with iron in the yolk. It isn't dangerous, but it gives away an overcooked egg and tastes stronger. Avoid it by sticking to the minutes and chilling the egg in iced water right away.

Shell and yolk color: what nobody tells you

How to store them
