|---|---|---|
| Diplomata | Pastelera + crema batida + sabor | Más liviana.
| Mousseline | Pastelera + manteca + sabor | Firme y aterciopelada.
Pastry cream is the most versatile cream in pastry: it fills tarts, pastries, éclairs and profiteroles, and it can also be baked. It's considered a mother cream, because many others come from it.

The variations
| Cream | What goes in | What for |
|---|---|---|
| Diplomat | Pastry cream + whipped cream + flavor | Lighter. At school, coffee and chocolate for éclairs |
| Mousseline | Pastry cream + butter + flavor | Firm and velvety. Fills the Paris-Brest |
| Chiboust | Pastry cream + Italian meringue + gelatin | The one in the Saint Honoré cake |
| Frangipane | Pastry cream + almond paste | For tarts that go in the oven |
Coffee and chocolate diplomat cream
250 g pastry cream, 125 g heavy cream, 100 g dark couverture chocolate and 1 tablespoon dissolved instant coffee. Melt the chocolate over a bain-marie, whip the cream to 3/4 with the coffee, whisk the chocolate into the pastry cream, then fold the two together with a spatula. Into a piping bag and into the fridge.
Almond mousseline
250 g pastry cream and 250 g butter, plus praline and a tablespoon of vanilla. Beat the pastry cream and, with the mixer running, add the butter in small cubes, steadily, until smooth and velvety. Finish with the vanilla and chopped praline.
Make it your own
- Swap some of the milk for cream for a richer result.
- Flavor it with lemon or orange zest, cinnamon, star anise or clove.
- Use whole eggs instead of just yolks (for example, three eggs and three yolks per liter).
- Use more or less thickener depending on the use: firmer for baked pastries, softer for fillings.
It's the classic filling for pâte à choux.
